Recipe Ingredients for Mashed Cauliflower

8 cups cauliflower (1 large head)
3 cloves garlic
28 ounces chicken broth (2 14 oz. cans)
2 tablespoons chopped chives

Recipe Directions for Mashed Cauliflower

  1. Combine cauliflower, garlic, & broth in large saucepan (if broth doesn't cover add some water)

  2. Bring to a boil & reduce to simmer until cauliflower is tender, about 12 minutes

  3. Reserve 2 tablespoons of the cooking fluid then drain

  4. Transfer to a food processor & process until smooth - use the reserved liquid as needed to moisten

  5. Season with salt & pepper & serve with chives on top
