Tasty sub for mashed potatoes & you can eat lots of it.

Recipe Ingredients for Mashed Cauliflower & Cabbage

1 head,+large+about+7"+dia green cabbage
3 T olive oil
1 head cauliflower
1 cup green onions
3 cups low sodium chicken broth
1 cup grated Parmesan cheese

Recipe Directions for Mashed Cauliflower & Cabbage

  1. Chop cabbage, onions and cauliflower in batches, set aside

  2. Heat oil in large stock pot

  3. Saute cabbage until it begins to brown (add a pinch of S&P)

  4. Add onions, saute 5 more minutes

  5. Add cauliflower, toss with cabbage and onions

  6. Pour in enough stock until vegetables are almost all covered

  7. Simmer 20 minutes or until the cauliflower is cooked

  8. Use food processor, immersion blender or potato masher to mash and get consistency desired. You may need to return the mash to the stove to simmer out more moisture.

  9. Add cheese a couple tablespoons at a time and blend well.

  10. Season to taste. I added a little paprika.
