Squash with a sweet taste, great with jasmine rice

Recipe Ingredients for Mashed Butternut Squash

2 cups butternut squash
3 cloves garlic
1 tbsp coconut milk powder
1/2 tbsp salt
1 tsp fresh thyme
1/2 cup water
2 tsp margarine

Recipe Directions for Mashed Butternut Squash

  1. saute 1/2 of the garlic in margarine until golden in pot

  2. add 2 cups of butternut squash cute in cubes

  3. add enough water to cover 1/3-1/2 of squash

  4. Cover pot until squash becomes soft

  5. Mash the squash to a desired consistency

  6. Add coconut milk, salt, rest of garlic, simmer for 1-2 minutes

  7. Add fresh thyme, mix. Serves 3
