Makes a good sub for mashed potatoes. The squash takes the flavor of sage very well.

Recipe Ingredients for mashed butternut squash

2 cups butternut squash, diced
1/4 cup chicken broth
1 tablespoon butter
1/2 teaspoon salt, pepper to taste
1 teaspoon sage

Recipe Directions for mashed butternut squash

  1. Boil or roast squash untill soft. Mash with the other ingredients.

  2. To save 25 calories per portion, use light butter instead.
