A healthy alternative to mashed sweet potatoes

Recipe Ingredients for Mashed Butternut Squash

4 cup, cubes Squash, Winter, Butternut
4 oz Plain Nonfat
5 tsp unpacked Sugars, Brown
1 tbsp Butter
1 tsp Cinnamon, Ground

Recipe Directions for Mashed Butternut Squash

  1. 1. Cut the squash in half and then bake in the oven @ 350 for about 45-60 minutes or until very tender (can also microwave instead if you are short on time, about 10-15 minutes)

  2. 2. Let the squash cool and then scoop into a mixing bowl

  3. 3. Add 1/4 cup nonfat plain greek yogurt, 1 tbsp butter, 2 tbsps brown sugar, and 1/2 - 1 tsp cinnamon (to taste)

  4. 4. Mix with mixer for about 5 minutes or until it reaches the texture you want
