I saw a vegan recipe for latkes, and I wanted to try it. I saw a recipe for cauliflower latkes, and I wanted to try it. So, naturally, I wanted to combine the two recipes into a healthy, baked, vegan treat. It might or might not be good, but I'll try it!

Recipe Ingredients for Mashed baked cauliflower latkes -V A

2 1/2 cups cauliflower
1/2 cup whole wheat pastry flour
1/2 cup soy milk
1/2 teaspoon salt
2 teaspoons baking powder
2 garlic cloves, finely chopped
1/4 cup chopped fresh Italian parsley
1/4 cup chopped fresh dill
1/4 cup breadcrumbs, finely ground

Recipe Directions for Mashed baked cauliflower latkes -V A

  1. Steam the cauliflower in the microwave. Blend 1/2 the cauliflower and the garlic in the blender until very smooth. Add remaining cauliflower, parsley, and dill. Pulse until cauliflower is chopped and mixture is still slightly chunky.

  2. Stir together all ingredients to make a soft batter. Preheat the oven to 400F degrees. Spray a baking sheet with non-stick cooking spray. Create pancakes by spooning batter onto the baking sheet. Bake until brown on the bottom, for about 10 minutes. Turn and bake for about 10 minutes more. Remove to a platter and keep hot in a low oven until ready to serve. (Latkes can also be baked on a non-stick griddle.) Serve with applesauce and plain soy yogurt.
