...with one potato because I think it improves the texture. Very yummy, lots of protein!

Recipe Ingredients for Mash'd Cauliflower

1 head cauliflower, cut into pieces
1 potato
6 oz fat free greek yogurt
1/4 c feta cheese
1 1/2 tbsp butter
2 tbsp chives, chopped

Recipe Directions for Mash'd Cauliflower

  1. Boil cauliflower and potato until both are fork tender.

  2. Drain and return to pot.

  3. Mash with butter, yogurt, feta, and chives.

  4. Serve immediately!
