Recipe Ingredients for Mascarpone Mashed Potatoes

1 1/2 lbs yukon gold potatoes, peeled and cubed
1/3 cup 1% milk
3 tbs mascarpone cheese
1/2 tsp salt

Recipe Directions for Mascarpone Mashed Potatoes

  1. Put potatoes in saucepan and cover with water

  2. bring to a boil; reduce heat, simmer 15 minutes or until tender

  3. drain; return to pan

  4. add 1/3 cup milk and 3 tbs mascarpone cheese and 1/2 tsp salt

  5. mash to desired consistency
