This is a surprisingly filling, but yummy gourmet salad. It works well for a summer bbq. It easily serves 2 with large servings or 4 as a decent side.

Recipe Ingredients for Marysia's Celery Salad

2 cups celery, hearts, sliced finely
1 green apple, slice into thin sticks, 1/2 inch long Use Granny Smith for best results
3 scallions, white part only, sliced very thin
2 tbsp light mayonaise, Miracle Whip
4 tbsp milk
1/2 tsp salt

Recipe Directions for Marysia's Celery Salad

  1. Clean the celery the day before. CHop it into 2 or 3 inch lengths and soak it in water with the salt added - use enough water to cover only and put the bowl in the fridge overnight. This ensures the crunch.

  2. Just before serving, slice up the apple and green onion (only the white part).

  3. Drain the celery and slice thinly

  4. Combine celery, apple and onion

  5. In a separate little bowl, combine the mayo and the milk. Add the milk gradually using a fork to whip up the mixture. This ensures it doesn't separate

  6. Dress the salad
