Vegetarian chili with dried kidney beans, chocolate and textured vegetable protein

Recipe Ingredients for Mary's Vegetarian Chili

2 T canola oil
3 c sliced celery
1 c diced onion
1 T cumin
2 T chili powder
1 dash garlic powder
8 c canned tomatoes
1 lb dried kidney beans, cooked
2 vegetable bouillon cubes, Knorr
1/2 unsweetened chocolate square
4 c water
1/2 c TVP, Bob's Red Mill

Recipe Directions for Mary's Vegetarian Chili

  1. Saute celery and onion in canola oil over medium heat in 5 qt dutch oven or stock pot. When onion and celery begin to soften and look transparent, add cumin, chili powder and garlic powder, stirring to mix. Saute 2 to 5 minutes longer.

  2. Add tomatoes, beans, bouillon and chocolate. Bring soup to a simmer and simmer about 10 minutes stirring occasionally.

  3. Add water and TVP. Simmer about 10 minutes longer.
