Succulent vegetables make this no pasta lasagna a wonderful treat without the pasta!

Recipe Ingredients for Mary's No Pasta Veggie Lasagna

1 medium zucchini
1 medium yellow squash
2 medium eggplant
1 medium onion
12 oz fresh baby spinach
16 oz light cottage cheese
8 oz light cream cheese
12 oz mozzarella cheese
8 oz pizza sauce
3 eggs

Recipe Directions for Mary's No Pasta Veggie Lasagna

  1. Wash and dice the zucchini, squash and onion and saute over medium heat in a little olive oil; drain and set aside.

  2. Peel and slice eggplant longwise, approx. 1/4 inch to 1/2 in thick. Sear slices individually on both sides and set aside.

  3. Slightly wilt spinach by placing in heat resistant collander and pouring very hot water over it. Drain completely and squeeze out any excess water. Set aside.

  4. Mix cottage cheese, cream cheese, mozzarella and eggs in a bowl; reserving enough mozzarella to sprinkle on top.

  5. Place sauteed veggies and spinach in a mixing bowl and season with kosher salt, black pepper, granulated garlic, and basil. Add pizza sauce and mix until all veggies are coated. Now you're ready to layer.

  6. Lightly oil a baking dish with olive oil and cover bottom with slice eggplant. Then place a layer of the veggie mixture, then a layer of the cheese mixture. Repeat layers until dish is filled. Sprinkle top with remaining mozzarella and bake in a 350 degree oven for 45 to 60 minutes. Let stand for at least 20 minutes before serving. Enjoy!
