Homemade favorite for breakfast or brunch. Use skim milk to lower fat amount.

Recipe Ingredients for Mary's Homemade Pancakes

2 cups self-rising flour
1/4 cup splenda or granular sugar-subsitute
1 tsp vanilla or other flavoring
1 egg, beaten
1/4 cup oil
1 cup lowfat buttermilk, or skim milk

Recipe Directions for Mary's Homemade Pancakes

  1. Mix flour and splenda in bowl.

  2. Beat vanilla, egg, oil, milk.

  3. Add to dry ingredients and stir with fork until well-blended.

  4. Use mixer on high for 30 seconds-1 minute. Can add more milk or water until desired thinness.

  5. Spray small skillet with cooking spray.

  6. Serving size may be more than indicated.

  7. 1 serving is approximately 2 oz pancake.
