Easy to make muffins - can keep the batter in the frig for a couple of weeks.

Recipe Ingredients for Mary's Healthy Muffins

15 ounces raisin bran
1 quart lowfat buttermilk
5 jumbo eggs
5 tsp baking soda
1 tsp salt
2 cups chopped walnuts
2 cups chopped dates
1/2 cup honey
5 cups flour
1 cup applesauce

Recipe Directions for Mary's Healthy Muffins

  1. Mix dry ingredients in big mixer. Add wet ingredients in separate bowl (with spout) and let sit for a few minutes for the baking soda to fiz a little, then add to dry ingredients. Makes 34 good sized muffins.

  2. Bake for 20 minutes at 400 degrees
