A Southern favorite in minutes. Sodium is reduced by using low sodium tomato sauce rather than jar spaghetti sauce.

Recipe Ingredients for Mary's 25 minute Meatloaf

2 pounds lean ground beef
30 oz tomato sauce, low sodium
1 cup crackers, unsalted and crushed
1/2 cup oats, old-fashioned
1 medium onion, chopped (optional)
2 eggs, slightly beaten

Recipe Directions for Mary's 25 minute Meatloaf

  1. Mix all items together well.

  2. Spray microwave-safe casserole dish big enough to fit meatloaf mixture in.

  3. cover and microwave for 20 minutes on high.

  4. Ketchup can be added to top and sides in thin layer.

  5. Return to microwave for approximately 5 minutes.

  6. Keep covered while cooking to retain moistness/flavor.

  7. Round dish works well. If no turntable in microwave, turn dish 1/4 turn every 5 minutes during cooking time. Meat will look gray.
