recipe is based on the recipe found in Cook's Country magazine, the June/July 2010 issue. By preparing and broiling the crab cakes in this manner they do not get soggy.

Recipe Ingredients for Maryland Style Crab Cakes

1 pound crabmeat
1 large egg yolk
1/4 cup breadcrumbs
2 small green onions, diced fine
1 tblsp parsley
2 tblsp unsalted butter, melted
2 tblsp mayonnaise
1 tsp hot sauce
2 tsps Old Bay seasoning
1 tblsp dijon mustard
1/2 tsp celery seed

Recipe Directions for Maryland Style Crab Cakes

  1. Dry the crab meat well with papertowels.

  2. Then gently fold in the remaining ingredients.

  3. Divide this mixture into 4 equal portions and shape into tight rounded cakes.

  4. Sprinkle some bread crumbs on your work surface Press the top of each cake into the crumbs and then place, crumb side down on a plate and refrigerate for 1 hour or up to 8 hours.

  5. Grease a small rimmed baking sheet with 1 tblsp of softened butter.

  6. Place the cakes onto the prepared caking sheet, crumb side down.

  7. Adjust oven rack to the upper-middle position and broil the cakes until they are golden brown, approx 12 to 15 minutes
