Recipe Ingredients for Marshmallow Fondant

15 oz mini marshmallows
2 lbs powdered sugar
1 tsp vanilla extract
2 tsp lemon juice
1/2 tsp lemon extract
1/2 tsp salt
2 tsp light corn syrup
2 T water

Recipe Directions for Marshmallow Fondant

  1. Sift powdered sugar. Prepare kneading surface with shortening.

  2. Grease bowl and spoon. Add marshmallows and water. Microwave to melt, stirring every 40 seconds.

  3. Immediately add extracts, lemon juice, and salt.

  4. Add powdered sugar 1 cup at a time, stirring after each addition. Knead when dough is too hard to stir.

  5. When all powdered sugar is incorporated, cover dough in two layers of plastic wrap and store in a ziploc bag, squeezing out all air. Let fondant cool and rest several hours or overnight.

  6. Fondant may be colored, kneaded on surface greased with shortening. When ready to shape, dust clean surface with cornstarch.
