Delicious hot or cold, this is fast and easy to prepare, using canned broth, fresh or frozen spinach, 1 package Perdue's Shortcuts carved turkey (lower in calories than the chicken shortcuts). Use lots of fresh dill and more lemon juice if you want. You can serve with a dollop of fat-free sour cream on top. I have also heard of putting a sprinkle of chopped hard-boiled egg on top, but I don't do this.

Recipe Ingredients for Marsha's Spinach Soup

100 ounces low sodium chicken broth
9 ounces turkey breast, carved
2 packages (10 ounce) spinach, chopped
1 cup scallions, chopped
1/4 c lemon juice
1 cup dill, fresh
1/2 cup cooked brown rice

Put everything in a big pot and cook till hot. That's it.
