Low calorie, low carb, even if you eat the whole batch! SO easy to make. Delicious hot or cold. Top with chopped hard boiled egg or a dollop of sour cream if you want, but neither is necessary.

Recipe Ingredients for Marsha's Spinach Soup (Green Borscht)

96 ounces low sodium chicken broth (2 large cans)
90 grams frozen chopped spinach (2 large bags)
66 grams scallions (one bunch)
20 grams fresh dill
4 tbs lemon juice

Recipe Directions for Marsha's Spinach Soup (Green Borscht)

  1. Pour the broth (I use low sodium College Inn) in a big pot. Add the spinach. Snip the scallions into 1/4 inch pieces including white and green parts (I use scissors). Add the feathery parts of about a half bunch of fresh dill, more if you love it. Put in the lemon juice. Bring to a boil and simmer about 15 or 20 minutes.

  2. Enjoy right away hot or refrigerate for a delicious cold summer soup. Keeps in refrigerator for 5 days. Flavor actually improves. If you want to put a dollop of low fat sour cream or a tablespoon of chopped egg, go ahead with no guilty feelings!
