This cold soup is very easy to make and so delicious, you won't believe it could be so good for you! AND under 100 calories per serving.

Recipe Ingredients for Marsha's Quick and Easy Gazpacho

96 ounces low sodium V8 Juice
14 ounces chopped tomatoes
10 ounces chopped red onion
1/2 c fresh cilantro
16 ounce Salsa
3 chopped cucumbers
1 red bell pepper, chopped
2 tbs extra virgin Olive oil
1/4 c white wine vinegar
1 sea salt to taste

Recipe Directions for Marsha's Quick and Easy Gazpacho

  1. Pour V8 juice in a large container.

  2. Add all the chopped veggies and cilantro and stir.

  3. Add the jar of Salsa.(I use World Class Salsa from Big Y, but any good quality medium spicy one will do)

  4. Add the olive oil and vinegar (more or less taste)

  5. Chill in refrigerator.

  6. I buy the tomatoes and onions already chopped up in containers at Big Y.

  7. I use the skinny Persian cucumbers.

  8. You can put a dollop of lite sour cream when serving. Don't forget to add the calories.
