A variation on my Whole Wheat Fluffy Pancakes, using unsweetened applesauce instead of milk. Still delicious, (tested by my toddler grandchildren), same calorie count. Add Equal or Splenda to batter if you want a sweeter cake. Makes 4 good size pancakes.

Recipe Ingredients for Marsha's Fluffy Whole Wheat Buttermilk Pancakes 2

1/3 cup Whole Wheat Buttermilk Pancake Mix
1/2 cup eggbeaters
1/2 cup unsweetened applesauce
1 tsp cinnamon

Recipe Directions for Marsha's Fluffy Whole Wheat Buttermilk Pancakes 2

Mix all ingredients. Let stand 5 minutes. Fry in spray oil (Pam) on each side. I use a pancake pan with four 4 inch openings (William Sonoma), which makes them rise up a LOT, but you can make them in any pan.
