Marshall's Gazpacho Recipe

Great to have in the refrigerator for a very good appetizer or for a meal by itself. The V8 can be substituted for with a low sodium tomato juice. Its meant to be chunky and have some texture, and improves with age. This will fill a one gallon container. It is ready to eat after it has been hand stirred, but it gets much better after a few days of the flavors blending in the refrigerator. None has ever lasted longer than 10 days so I cannot advise on the limits of storage.

Recipe Ingredients for Marshall's Gazpacho

3 tbsp Tabasco Sauce
2 cups cucumber, seeded and finely chopped
1 cup carrots, finely chopped
1 cup red onion, finely chopped
1 cup celery, finely chopped
1/2 cup radishes, finely chopped
1 cup red bell pepper, finely chopped
2 cups avocado, finely chopped
1 1/4 lbs tomatoes, finely chopped
8 tbsp cilantro
1/8 tsp Worcestershire sauce
1/4 cup olive oil
1/4 cup red wine vinegar
1/8 cup garlic, finely chopped
2 tsp white pepper
46 oz V8 Vegetable Juice, low sodium

Recipe Directions for Marshall's Gazpacho

  1. Peel and seed the cucumber.

  2. Finely chop by hand all of the ingredients and add to a large bowl or 1 gallon large mouthed container you can put directly in the refrigerator.
