This delicious side dish is ideal for just about any occasion, from a weeknight supper to a special dinner. Cinnamon and nutmeg nicely season baby carrots simmered with orange marmalade and brown sugar.

Recipe Ingredients for Marmalade-Glazed Carrots

2 lbs carrots
1/2 c orange marmalade
2 T brown sugar
1 T butter
1/2 t cinnamon
1/4 t salt
1/4 t nutmeg
1/8 t pepper
1 T cornstarch

Recipe Directions for Marmalade-Glazed Carrots

  1. In a 3-qt slow cooker, combine the carrots, marmalade, 1 T water, brown sugar, butter, and seasonings. Cover and cook on low for 5-6 hours or until carrots are tender.

  2. Combine cornstarch and remaining water until smooth; stir into carrot mixture. Cover and cook on high for 30 minutes or until thickened. Serve with a slotted spoon.
