Recipe Ingredients for Marlene's Mexican Rice

1 cup long grain rice
8 oz chopped tomatoes in juice
1/2 medium onion
2 T vegetable oil
2 tsp Better Than Bouillon Chicken Base
1 serrano pepper, chopped
2 serrano peppers, whole
4 3/5 oz g) (g g) Cut Corn

Recipe Directions for Marlene's Mexican Rice

  1. Put rice in large heatproof bowl and pour boiling water over to cover. Stir once then leave to stand for 10 minutes. Tip into strainer over the sink, rinse under cold water, then drain again. Set aside to dry slightly.

  2. Put the tomatoes and juice into the blender or food processor, add onion, chopped seranno and garlic and process until smooth.

  3. Heat the oil in a large, heavy based pan, add the rice and cook over a moderate heat until it becomes a delicate golden brown. Stir occasionally to ensure that the rice does not stick to the pan.

  4. Add the tomato mixture and stir over a moderate heat until all the liquid has been absorbed. Stir in the chicken base dissolved in a scant 2 cups of water (may use chicken stock or broth), salt, whole chillies and peas or corn. Continue to cook until all the liquid has been absorbed and the rice is tender.

  5. Remove the pan from the heat, cover it with a tight-fitting lid and leave to stand in a warm place for 5-10 minutes. Remove the chillies, fluff up the rice lightly and serve.
