Recipe Ingredients for Marlene Grilled Chicken Salad

2 tsp olive oil
1 tbsp garlic
1 tsp thyme
1 tsp Lemon Zest
1/2 yellow onion
1 cup Mushrooms
3 cups spinach
1 cup mandarin oranges
1 avocado
2 chicken breast

Recipe Directions for Marlene Grilled Chicken Salad

  1. cook 1-2 packs raw thin sliced chicken tenders in 2 tsp of olive oil

  2. add garlic, thyme and lemon with desired season (e.g. roasted peppers)

  3. Cook for 5-10 minutes or until done

  4. Remove and place on clean paper towel or serving dish

  5. Slice on raw red onion

  6. Cook raw onions slices in one tsp olive oil - cook for 3-5 minutes or until carmalized, add 3-4 cups spinach and 2-3 cups of mushrooms

  7. Cook for 3-4 minutes and then remove

  8. Place spinach, onions, and mushrooms in salad bowl

  9. Add cooked chicken strips - arrange vertically in salad bowl

  10. top with mandaring oranges and avocado

  11. Let stand for 5 minutes and then serve

  12. Top off with you favorite lite dressing (e.g., mango, vinegarette)
