Place batter either in 12 muffin cups or 1 loaf pan and bake at 350 (20 minutes for muffins or 35-40 for loaf pan). Optional: 1/2 cup chopped nuts

1 egg
1 apple, grated WITH peel
1/4 cup olive oil
1/4 cup applesauce
3/4 cup milk (can use plain yogurt or sour milk)
1 1/2 cups whole grain flour
1/2 cup oatmeal
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
