Recipe Ingredients for Mark's Quick Onion, Potato, and Leek Soup

2 cup Leeks, (Bulb And Lower Leaf-portion)
1 tbsp Omega Plus Buttery Spread
1 cup (8 fl oz) Water
1 cup Soup, Chicken Broth
1 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
0.25 cup Parsley
2 clove Garlic
0.5 cup, chopped Onions
1 cup(240 g) Soup, Chicken Broth

Recipe Directions for Mark's Quick Onion, Potato, and Leek Soup

  1. Clean and cook garlic, leeks and onion in butter make sure not to scorch the leeks

  2. bake and dice the potato

  3. add to veggies and cook with the broth

  4. remove half of mixture and puree

  5. add parsley and cook through with thyme, salt and pepper to taste

  6. add a dash of cayenne
