Just a yummy tuna melt. I like to use the Cabot Hunter's sharp and the Thomas' 100 calorie muffins.

Recipe Ingredients for Mark's New England Tuna Melt

1 can tuna
1 carrot
1 small onion
2 stalks celery
2 1/2 tablespoons mayonnaise
2 large tomatoes
6 English muffins
6 ounces sharp cheddar cheese

Recipe Directions for Mark's New England Tuna Melt

  1. Chop tuna, celery, carrot and onion. Combine with mayonnaise, dried mustard and other spices to taste.

  2. Toast the muffins.

  3. Top each half with the mixture and a slice of tomato and a 1/2 ounce of cheese.

  4. Broil until melty and delicious.
