Corn Pasta mac and cheese variation on Mark Bittman's vegetarian cookbook. Reduced fat cheese and slow cook the roux (well worth it)

Recipe Ingredients for Mark Bittman Variation Mac And Cheese

16 oz Corn Pasta
3 tbsp butter
3 tbsp flour
1 1/2 cup milk
2 g bay leaf
100 g 75% light cheddar
1/4 cup parmesan
4 1/2 oz Reduced Fat 4 Cheese Italian Shredded Cheese

Recipe Directions for Mark Bittman Variation Mac And Cheese

  1. cook corn pasta

  2. make roux with butter flour

  3. heat milk with whole bay leafs (2)

  4. slowly add milk to roux.

  5. add cheddar

  6. mix with almost fully cook pasta add parm

  7. season

  8. put in baking dish

  9. cheese on top

  10. bake 400 for 15-25 min
