I created this recipe because my daughter wanted to eat mac and cheese or tacos for every dinner. Its a great one bowl meal. Also an awesome OAMC recipe. Freezes great!

Recipe Ingredients for Marisa Taco Mac & Cheese - revised

9 cups of small shells (one box)
1 1/2 lb of ground beef
24 tsp of taco seasoning (2 packs)
2 cups of water
1 1/4 cups of Cheddar Cheese soup
1 3/4 cups of 2% milk
8 oz of cheddar cheese (shredded)
2 slices of American cheese
8 oz of taco sauce
10 oz of sour cream

Recipe Directions for Marisa Taco Mac & Cheese - revised

  1. Brown the ground meat and drain off all the fat. While meat is cooking, start boiling water for pasta.

  2. Follow directions for pasta but make them al dente.

  3. Add two packages of taco seasoning to meat and 2 cups of water, cook to a simmer - 3 or 4 minutes

  4. Add pasta to meat and mix well

  5. Combine condensed Cheese soup & milk on stovetop cook til melted and smooth. Add 6 oz of shredded cheddar cheese & American until smooth. Add more milk if needed

  6. Remove from heat and let sit for 1 minute.

  7. Add taco sauce and add to meat and pasta. Combine well.

  8. Serve each bowl with some shredded cheese and dollop of sour cream!
