Recipe Ingredients for Mariner's Pie

600 g potatoes, peeled and chopped
2 large leek, sliced and well rinsed
1 1/2 cups skim milk
2 tbsp. skim milk
1 tbsp. fresh parsley, chopped
1/4 cup butter
1/2 cup flour
450 g cod (skinned, boned and cut into chunks)

Recipe Directions for Mariner's Pie

  1. Boil the potatoes in lightly salted water for about 15 minutes. Drain them and mash with 2 tbsp. milk and 2 tbsp. butter.

  2. While the potatoes are cooking, boil the leeks in lightly salted water for about 8 minutes. Drain, but keep 1 cup of the cooking water.

  3. Combine the cup leek water, 1.5 cups milk and parsley (or other herbs).

  4. Melt 2 tbsp. butter in a saucepan. Add the flour and cook gently for 1 minute. Gradually, stir in the leek-water-milk-herb mixture. Heat, stirring constantly, until thickened and smooth. Season with salt and pepper (and/or more herbs) to taste.

  5. To an ovenproof dish, add the fish. Cover the fish with the leeks. Pour the sauce over the leeks. Then top with the mashed potatoes.

  6. Bake at 375 F for 25-30 minutes, or until the potatoes are golden brown.
