Recipe Ingredients for Marinated Zucchini & Squash

1 zucchini
1 yellow squash
1 red sweet pepper
2 tbsp lemon juice
1 tbsp olive oil
1 tsp sugar
1/8 tsp salt
3/4 tsp oregano
1/8 tsp black pepper
1 clove garlic

Recipe Directions for Marinated Zucchini & Squash

  1. Place diced zucchini, squash and red pepper in bag.

  2. Combine lemon juice, olive oil, sugar, salt, oregano, pepper and garlic.

  3. Add marinade to bag with veggies and marinate for 8 hours or overnight.
