Recipe Ingredients for Marinated TOFU over Wilted Spinach

12 oz firm tofu
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tsp minced garlic
1 tsp minced parsley
1 tsp minced rosemary
1 tsp thyme
1/4 tsp sea salt
1/2 tsp pepper
3 tsp olive oil
12 oz fresh spinach
4 cloves garlic, minced
1/2 tsp sea salt
1/2 tsp pepper

Recipe Directions for Marinated TOFU over Wilted Spinach

  1. REMOVE all moisture from tofu by cutting in 4 slices and placing in saute pan that is lined with paper towels; top with paper towels and place a pie pan over the towels followed by can goods as a good weight then place in frig for about 30 minutes;

  2. Prepare marinade with olive oil, vinegar & spices

  3. Remove tofu from frig and discard the paper towels

  4. Saute the tofu in marinade mixture; remove from heat and place in frig - the longer the marinade the stronger taste of the tofu;

  5. Pour in saute pan the 3 tbsp olive oil;

  6. brown the 4 cloves of garlic/minced

  7. add to this - 3 tbsp water to help the wilting process

  8. add the fresh spinach (I remove the stems) and cover with a glass lid (so you can keep track of the wilting process)

  9. When wilted - place on serving platter

  10. cover with lid to keep warn

  11. Warm up the marinated tofu

  12. Place on the wilted spinach

  13. Enjoy with friends
