Recipe Ingredients for marinated shrimp salad

1 pound cooked shrimp
2 tbsp olive oil
2 tbsp fresh lemon juice
2 tbsp parsley, chopped
8 oz yogurt, plain fat free
3 cups romaine, shredded

Recipe Directions for marinated shrimp salad

  1. toss all ingredients except yogurt and romaine together in glass bowl and refrigerate for at least 3 hours, but preferrably overnight.

  2. eat plain, or add shrimp to romaine, add yogurt to juices in bottom of dish to make dressing.
