Marinated Potato-Tofu Salad Recipe

The addition of tofu makes this a main dish. Good for picnics - no mayonnaise.

Recipe Ingredients for Marinated Potato-Tofu Salad

5 medium potatoes, Yukon Gold or red
16 oz extra-firm tofu
1 T olive oil
1/2 medium green pepper, cut into thin strips
1/2 medium red bell pepper, in thin strips
1/4 c sun-dried tomatoes, thinly sliced
1/2 c vinaigrette
1 salt
1 pepper, freshly ground

Recipe Directions for Marinated Potato-Tofu Salad

  1. Bake or microwave the potatoes in their skins until done but still firm. Let them cool to room temperature. Slip their skins off and cut into 1/2-3/4-inch chunks, and place in a serving container.

  2. Meanwhile, cut the tofu into 1/2-inch-thick slices. Blot well between clean tea towels or several layers of paper towels and cut into 1/2-inch dice.

  3. Heat just enough oil to coat the bottom of a wide skillet. Add the tofu and sauté over medium heat, stirring frequently until golden on most sides.

  4. Add the tofu to the potatoes. Add the remaining ingredients and stir together gently. Cover and allow the salad to marinate at room temperature for 30 - 60 minutes. If needed, add a bit more vinaigrette to moisten, then stir again and serve.
