Recipe Ingredients for Marinated Mediterranean Salad

1/8 cup honey
1/4 cup vinegar
1/8 cup olive oil
1/2 teaspoon yellow mustard or spicy brown mustard
1/2 teaspoon lemon juice
1 medium cucumber, sliced
2 medium roma tomatoes, sliced
1/2 avocado, diced

Recipe Directions for Marinated Mediterranean Salad

  1. Mix honey, vinegar, olive oil, mustard, and lemon juice well.

  2. Pour over cucumber tomato and avocado.

  3. Allow to marinate for as long as possible prior to meal (about an hour).

  4. Right before serving mix gently.

  5. Serve
