Scrumptious way to eat Kale. Don't skimp on the garlic!

Recipe Ingredients for Marinated Kale Salad

12 oz Kale
1 red bell pepper
2 c grated beets
1 c grated carrot
5 cloves garlic, minced
1/3 c Tahini
1/4 c almond butter
2 T sesame seeds
1/4 c cider vinegar
1/4 c soy sauce

Recipe Directions for Marinated Kale Salad

  1. Chop kale into small pieces.

  2. Mix Kale with other vegetables and toss in sesame seed.

  3. Mix minced garlic, tahini, almond butter, vinegar and soy sauce into a dressing - add water if too thick.

  4. Toss vegetables with dressing and serve; holds well over several days.
