A lower-fat version of "Hopvine's Marinated Roasted Eggplant". The full-fat version is incomparably delicious, but this is yummy and way better for your skinny jeans.

Recipe Ingredients for Marinated Eggplant

1 large eggplant
2 tbsp olive oil
4 tbsp lemon juice
3 tablespoons red wine vinegar
1 tablespoon balsamic vinegar
1/4 teaspoon garlic powder
1/4 teaspoon fennel seeds, dried and ground
1/4 teaspoon rosemary, dried
1/2 teaspoon dried basil, crushed before adding
1/2 teaspoon oregano, crushed before adding
1/4 teaspoon kosher salt, to taste
1/8 teaspoon fresh ground black pepper, to taste

Recipe Directions for Marinated Eggplant

  1. Peel the eggplant. Cut into thin horizontal slices; cut each slice into several 1"-wide strips.

  2. Add all ingredients to a Ziploc bag. Seal tightly, leaving some air in the bag. Shake thoroughly.

  3. Open the bag, squeeze out excess air, and reseal. Refrigerate for at least 1 hour.

  4. Preheat oven to 400 degrees F. Place eggplant slices on a non-stick baking sheet and roast for 7 minutes. Turn with tongs; roast for another 7 minutes or until tender.

  5. Keep refrigerated in an airtight container for up to four days.
