Recipe Ingredients for Marinated Chicken Fajitas

1/4 cup lime juice
1/4 cup olive oil
4 garlic clove, minced
1/2 tsp dried oregano
1/4 cup cilantro leaves, chopped
1 lb boneless, skinless chicken breast
2 onions, sliced
1 green pepper, sliced
1/2 cup salsa
1/2 cup shredded Monterey Jack cheese

Recipe Directions for Marinated Chicken Fajitas

  1. Night before:

  2. Combine the lime juice, olive oil, garlic, oregano and cilantro in a sturdy, sealable plastic bag. Slide in the chicken fillets and turn the bag to coat them with marinade. Refrigerate. Slice the onions and core and slice the pepper and refrigerate in sealable bags.

  3. Supper time:

  4. Arrange an oven rack 6 inches from the heat source. Preheat the broiler.

  5. Cook the onions and peppers, stirring occasionally, until very soft, about 15 minutes. Grill marinated chicken fillets about 5 minutes per side, until meat is no longer pink in the middle. Discard leftover marinade. Place the chicken on a cutting board, cover, and let rest for 5 minutes.

  6. To warm the tortillas, roll up four at a time and wrap them in foil. Repeat with the other four. Warm the tortilla packets in the oven while assembling the other fajita elements.

  7. Cut each chicken fillet into thin slices. Arrange these slices on a platter with, onions, peppers and warm tortilla packets, along with salsa and shredded cheese in small bowls. Let the troops assemble their own fajitas.
