0.5 cup Olive Oil
2 small Onions
2 cloves, raw Garlic
2 stalk, large (11"-12" long) Celery
2 medium Carrots
0.5 tsp Sea Salt
0.5 tsp Pepper, Black
64 oz Tomatoes, Red, Ripe
2 leaves Spices Whole Bay Leaves

Recipe Directions for Marinara Sauce [Giada De Laurentiis]

In a large casserole pot, heat 1/2 cup olive oil over a medium-high flame. Add two small finely chopped onions and 2 minced garlic cloves; sauté until the onions are translucent, about 10 minutes. Add two finely chopped stalks celery, 2 finely chopped carrots, and 1/2 teaspoon of each salt and pepper. Sauté until all the vegetables are soft, about 10 minutes. Add 64 oz. chooped tomatoes [or canned crushed tomatoes] and 2 bay leaves; simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)
