Good marinade for: Eggplant zucchini mushrooms onion fennel bulb asparagus Should be enough for 1.5 kilograms of vegetables. If people like veggies they will likely eat at least 300 grams. I assume a lot of the olive oil will drain off when grilling. That is why I set # of servings to 8.

Recipe Ingredients for Marinade for Grilled Vegetables

1/4 cup lemon juice
6 tbsp balsamic vinegar
9 tbsp olive oil
10 grams garlic
2 tbsp dijon mustard
1 tsp tarragon
1 tsp basil
1/2 tsp oregano
1 tsp honey
1/8 tsp pepper

Recipe Directions for Marinade for Grilled Vegetables

  1. mix all ingredients. marinate vegetables 15 minutes to 1 hour.

  2. Cook vegetables on gas grill on high heat until done and well colored (not burned).
