Recipe Ingredients for Marilyns Risotto

1 cup arborio rice
14 oz low sodium chicken broth
1 c water (or broth)
2/3 c carrot, chopped
1/3 c onion, chopped
1/4 c celery, chopped
2 tsp olive oil

Recipe Directions for Marilyns Risotto

  1. In a small saucepan, bring the broth and 1/2 the water to a simmer

  2. In a larger pan, saute the vegetables in the oil over a medium heat

  3. Add rice to larger pan along with about 1 cup of hot broth

  4. Stir constantly until liquid is absorbed

  5. Add broth about 1/2 cup at a time stirring until it is absorbed

  6. continue this process adding water until rice is cooked through and tender but still firm

  7. Will take about 15 minutes
