Thick, creamy black bean soup each serv about 1-1/2 cup

Recipe Ingredients for Marilyn's Black Bean Soup

2 tsp olive oil
1 large onion, chopped
2 tsp ground coriander
1 tsp ground cumin
1/4 tsp ground pepper
1/2 tsp cilantro
7 oz sweet potato, (1 lg) peeled and diced
6 cups (48 oz) chicken broth (low sodium)
45 oz black beans reduced sodium, 3 cans

Recipe Directions for Marilyn's Black Bean Soup

  1. Heat oil in large pot over med heat

  2. Saute onion until soft (about 5 min)

  3. Add coriander and cumin stirring constantly about 30 seconds (do not burn)

  4. Immediately add broth and remaining ingredients

  5. Simmer until potato is tender about 20 minutes stirring occasionally

  6. Remove from heat and cool slightly

  7. Puree with immersion blender or puree in batches in regular blender

  8. Can be made in crock pot 4-5 hrs on high or 8 10 hrs on low
