Recipe Ingredients for MARILYN'S BANANA/FLAX MUFFINS

2 c 1% milk
3 medium bananas, mashed (very ripe)
2 eggs
2 T Agave syrup
3 scoops (3 gm) Stevia powder
1 c oats (dry(
3/4 c oat flour
1 c white whole wheat flour
2 oz (1/4 cup) almond meal
1 c flaxseed meal
4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 1/2 tsp cinnamon

Recipe Directions for MARILYN'S BANANA/FLAX MUFFINS

  1. Grease muffin tins with cooking spray.

  2. Preheat oven to 350.

  3. Warm the milk a little (not hot, just barely warm), and mix it with the whole oats. Let this sit for approximately 30 minutes to soften the oats.

  4. Combine dry ingredients and set aside.

  5. Beat the egg slightly in another bowl and mix in the bananas and oatmeal/milk combination.

  6. Combine the dry and wet ingredients and mix with a spoon just until combined.

  7. Use an ice cream scoop or ladle amount of batter for each muffin.

  8. Bake approximately 12-15 minutes or until toothpick comes out clean.

  9. Let cool for a few minutes before removing from pan.

  10. Makes 18 medium size muffins
