A favorite of Gustav Mahler, this is the recipe his sister used to tempt the great composer. Gustav Mahler's sister, Justine, made killer Marillenknoedel (apricot dumplings), a traditional Viennese dish. One of Mahler's friends, Ludwig Karpath, recalled the composer's shock at finding out that Karpath wasn't a fan of Marillenknoedel. "What!" Mahler shouted to his friend. "Is there a Viennese to whom Marillenknoedel means nothing? You will come with me right away to eat the heavenly dish. Recipe Ingredients for Marillenknoedel

2 1/5 lbs potatos
8 3/4 oz white flour
1 egg
1 pinch salt
3 3/20 oz butter
3 1/2 oz breadcrumbs
13 oz canned apricots

Recipe Directions for Marillenknoedel

  1. Place the potatoes, cut and peeled, through a mill once.

  2. Work the milled potatoes into the flour, egg and salt on a cutting board while they are still warm to make a smooth paste.

  3. With a rolling pin, or by hand, knead the paste, flatten it.

  4. Cut paste into fine slices.

  5. Carefully enclose an apricot in each slice.

  6. Cook the knoedel for five to 10 minutes in a sauce pan of boiling salt water.

  7. Drain.

  8. During this time, melt the butter in a frying pan and brown the bread crumbs over a low flame.

  9. Roll the knodel in bread crumbs.

  10. Sprinkle with sugar before serving.

  11. Variations:

  12. Use cream cheese in place of the potatoes, so as to augment the amount of flour.

  13. Replace the apricots with prunes or cherries.

  14. Add yeast to the paste.

  15. Place a cube of sugar inside each apricot slice.

  16. Serve the knoedel with ground poppy seeds in place of bread crumbs, moistening them afterwards with butter and sugar.
