An easy to make low-calorie tomato pie with healthy ingredients.

Recipe Ingredients for Maria's Tomato Pie

4 potatoes, large
4 oz 1% cottage cheese
10 roma tomatoes
1 onion, large
1 jalapeno pepper
1 tbsp olive oil
1/4 cup egg beater
1/4 cup almond breeze

Recipe Directions for Maria's Tomato Pie

  1. Peel and slice potatoes

  2. Boil potato slices until tender

  3. Mash Almond Breeze almond milk & Egg Beaters with cooked potatoes

  4. In 9" pie pan or caserole dish apply mashed potatoes like a pie crust (be sure to reserve enough mashed potato batter to cover the pie ingredients later)

  5. Place in oven and broil for approx. 10-15 minutes or until golden (be sure to check often that it does not burn)

  6. Remove from oven when potato crust is golden

  7. slice tomatoes, onion, and jalapeno pepper

  8. Arrange in layers on the prepared crust

  9. Drizzle with olive oil and season to taste

  10. Spread 1% cottage cheese on top of vegetables

  11. Spread remaining mashed potato batter over top of pie

  12. Bake at 350 degrees for 45 minutes

  13. Set oven to broil for approx 10-15 minutes or until top pie crust is browned

  14. Let cool and serve
