I use this as a base for my general tsaos chicken, kung pao and sweet & sour.

Recipe Ingredients for Mariam's Vegetable Rice

1 cup dry Natural Brown Rice
2 1/4 cup (8 fl oz) Water
1 tbsp Butter
1 carrot (7-1/2") Carrots
1/2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1/2 medium (2-1/2" dia) Onions
1/4 cup Peas, Green
1 tsp Kosher Salt
2 green onions

Recipe Directions for Mariam's Vegetable Rice

Cook rice as the package dictates except add salt and butter. Put all vegetables except the scallions and peas in a food processor and pulse until fine but not a puree. When rice is about 7 minutes away from being done add the pulsed vegetables. Return lid and continue cooking. Once rice is done the vegetables should be as well. Make sure you have pulsed them fine enough they will cook very fast. Remove from heat and add green peas and one of the green onions chopped. Chop the second one and serve it as garnish over the dish. Serve as a side or under a main dish.
