Recipe Ingredients for Mariam's Sugar free Lemon Meringue Pie

5 tbsp Corn Starch
0.13 cup All Purpose Flour
60 grams No Calorie Sweetener
1/4 tsp Kosher Salt
3 1/2 large Egg, Yolk
3 large Egg, White
1 1/2 cup boiling water
80 grams Juice
3 tbsp Unsalted Butter
178 grams Pillsbury Pie Crusts All Ready Rolled
1/4 tsp Cream of Tartar
1 tsp. vanilla extract
1/4 tsp. lemon rind

Recipe Directions for Mariam's Sugar free Lemon Meringue Pie

  1. Mix flour, cornstarch, Splenda and salt in top of double broiler. Add boiling water, blend thoroughly. Cook over boiling water, stirring constantly unitl mixture is thick and clear. Beat egg yolks and stir in a little of the hot mixture. Pour eggs back into not mixture over double boiler and cook 2 minutes stirring constantly. Remove from heat; slowly add lemon, juice, butter and lemon rind.(1/4 tsp of rind). Mix well and pour into a cooled pie shell.

  2. Put egg whites into a mixing bowl. Beat on high until frothy and add 1 tbsp. cornstarch, cream of tartar and 1/2 cup Splenda and beat until stiff peaks form. Put on top of pie and seal edges.and bake at 350 for 12-15 minutes or until golden brown. Cool on rack for at least 30 mins.
