Recipe Ingredients for Mariam's Honey Wheat Bread

4 cups Gold Medal Better for Bread Flour
4 serving Clover Honey
5 oz Active Dry Yeast
3 tbsp Unsalted Butter
3 tsp Kosher Salt
3 cup (8 fl oz) Water
4 serving Clover Honey
1 tbsp Unsalted Butter
3 1/4 cups Flour
1 cups White Whole Wheat Flour

Recipe Directions for Mariam's Honey Wheat Bread

In a large bowl dissolve yeast in 3 cups warm water(110-115 degrees) and add 1/4 cup honey. Let sit for about 5 minutes to proof the yeast. I should be bubbly. Add the bread flour and stir together. Let set for 30 minutes or until bubbly and big. Melt 3 tbsp. butter and add it to 1/3 cup. honey. Add to bread mixture along with the salt. Add 4 cups whole wheat flour & 1 cup white whole wheat flour and put in mixing bowl. Using dough hook bring mixture together. I added 1.25 more cups of flour but only use enough to make it pull away from the sides of the bowl. It will be sticky. You might need to add more flour(the weather makes a difference) but I didn't. Place in a bowl that has been oiled. Turn over once so both side have been oiled and let set until doubled in size. Punch down and form into a free form loaf or a large loaf pan. Let it rise for about 45mins.-1 hour. If in a pan it should be about an inch above the rim. If freeform you may not get the height. Bake at 350 for 25-30 minutes. Do not over bake.
