Marg's Tortilla Soup Recipe

This is my adaptation of an Art Smith recipe for Fiesta soup. He called for 2 cups of corn and no avocado, I cut back the corn to one cup and added 1 avocado. Serve it with a dollop of fat free sour cream, a bit of grated cheese, or some crushed baked tortilla chips (add the corresponding calories accordingly).

Recipe Ingredients for Marg's tortilla soup

2 cups salsa
19 oz black beans
1 cup corn
2 cups chicken
30 oz vegetable broth
3/4 avocado

Recipe Directions for Marg's tortilla soup

  1. Combine all ingredients in a large pot and bring to boil, then reduce heat and simmer 6-8 minutes.

  2. Stir in chopped avocado and cook a minute or two more.

  3. Serve with your choice of garnish.
