Recipe Ingredients for Marg's Lo-fat TExas Hash

19 oz can black beans
28 oz can tomatoes
1/4 cup chicken broth
1/2 cup raw basmati rice
2 large onions, chopped
1 red sweet pepper, chopped
1 cup sliced mushrooms
1 stalk celery, chopped
1 clove garlic, minced
2 tsp chili powder
1 tsp salt
1 pepper to taste
1 tsp mexican seasoning (to taste)

Recipe Directions for Marg's Lo-fat TExas Hash

  1. Cook all vegies in broth in a dutch oven until tender, adding more broth if necessary.

  2. Add tomatoes, then seasonings, then beans and rice. Stir.

  3. Bring to boil, then cover and reduce heat to very low.

  4. Cook 20-30 minutes, until rice is tender, stirring a couple times to prevent sticking.
